Ever since I was introduced to Cook for a Day, Eat for a Week cooking, I've been hooked to the idea (I'm pretty sure I can thank Rachel Ray for that one). In exchange for a few hours on my feet in the kitchen, I can call it a week with a refrigerator full of ready-to-go homemade meals? Yes please! Today was one of those days - well, kind of. With work at 4pm, I started at ten this morning and got half a day of cooking in (with another half to go later this week). But all-in-all, I was pretty pleased with what I got accomplished.
Main Dishes:
- Beef Curry with Apples and Peanuts
- Macaroni and Cheese Casserole with Bacon and Green Peppers
Sides:
- 2 Loaves of Homemade White Bread
- White Rice
- Oven Baked Tortilla Chips
Snacks:
- Honey Oatmeal Bars with Peanuts (a variation of this recipe)
And guess what I'm having for dinner??? Leftovers from Sunday's trip to the diner!! LOLOLOL. ;)

That's such a good idea. Your meals look delicious. We always put bacon in our macaroni cheese but I've never added peppers too - I'll have to try that. x
ReplyDeleteHi Gillian! Thank you for visiting :) Cooking several items at once is my new "thing" in cooking - just as much work to clean a couple of pots and pans as it is several. And it's such a relief on my heart to have healthy, homemade choices in the fridge for my husband, especially as I am often at work - it's all ready to go so there's less temptation to go to the convenient fast food restaurants that are on every corner of our city. And the peppers do add a wonderful touch - very savory and delicious; please let me know what you think when you try them! :)
